What’s For Lunch? – Hawaiian Salad: Ham And Pineapple

So yesterday I was worried that it would be the heat, and my sweat, that would put undue wrinkles in my suit. I have to say: a full-on down pour turns out to be just as effective, if not more so, than me running to the ferry. And it stops me from making the 1-mile run too! If there are ever days that I may opt to take the bus instead of run, it will be the days that are either too hot which is subjective, of course, and days that are raining cats and dogs, like today. Wow it was raining hard! On the plus side: I really love to run in the rain. I find that the cooling effect of the rain is amazingly therapeutic while I run, and I feel like I can go forever in a good stiff rain like this morning was. It’s really a calming and meditative feeling. So, while I couldn’t run in my suit, I definitely enjoyed my morning run!

Hawaiian Salad, What you’ll need:

  • Mixed Salad Greens
  • 1 Avocado, chopped
  • 1/2 trimmed Leek, sliced
  • 8 oz Rosemary Ham (or just cooked ham)
  • 1/2 cup Pineapple, sliced
  • 4 medium White Button Mushrooms, sliced
  • 2 tablespoons Flax Seed
  • 2 tablespoons Olive Oil

Mix it all together, and enjoy! This combination is really quite excellent! The avocado flavor is relaxed in this dish, adding a creaminess that compliments the flavor of the pineapple significantly. The mushrooms, as I like them to do, absorb most of the flavor of their surroundings, which in this case is olive oil, pineapple, and ham, and they help to replay that flavor. With the flax seed to add a little earthy nutty flavoring, and the leeks to offset the sweetness of the pineapple, the dish really comes together nicely!

A trick I do with the pineapple: I buy a pineapple at least 5 days before I plan on eating it. I put it on a rack, preferably with a wire mesh, or something with very little surface area, and leave it there for several days before cutting in to it. I find that the flavor of the pineapple after it’s been ripening further for several days is excellent – it almost tastes like it has been soaked in rum and baked! I highly suggest that you give this a try!

Why should the pizza lovers have the monopoly on the amazing combination of Pineapple and Ham? Well, now they don’t. You can have your own version of the Hawaiian pizza, but in a salad: the Hawaiian Salad!
