UPC’s Bacon Scallop Tower

Scallops are an amazing food! They have a subtle delicious flavor, which borders on a rich meat, but without the complexity that you get out of red meats. I love to combine other subtle but delicious flavors, like the Lemongrass Coconut Scallops that I did some time back. Lemongrass is a great way to put together a scallop meal, using coconut butter to pull it together. Other common ways to use scallops is to combine them with much stronger flavors, and since scallops are subtle, they let stronger flavors take over.

Bacon with Scallops:

This has definitely been done before! I’ve seen a multitude of pictures on the internet of Bacon Wrapped Scallops, held together with a toothpick. They can be fried, baked, etc. What I haven’t seen is a meal made out of these. So I set out to put together a healthy meal using bacon and scallops, and the results, as you’ll see when you try it, were delicious!

UPC’s Bacon Scallop Tower; What you’ll need:

  • 1 lb Scallops (mine were frozen; fresh is, of course, better!)
  • 1 lb Bacon (Turkey Bacon is perfect for this recipe because the flavors are more subtle)
  • 2 Ripe Avocados, sliced
  • Favorite Salad Greens (I used an Organic Spring Mix)
  • 1 tablespoon Coconut Oil
  • Spices: Salt, Pepper, Turmeric
  • Optional ingredients: Peppers, Tomatoes, other colored veggies

Serves: 4
Prep and cook time: 25 minutes

1. Cook the bacon.

  • I like to cook my bacon on medium heat covered.
  • I let it cook more slowly because I prefer my bacon to have a chewy consistency when it’s done.
  • This takes me about 20 minutes, stirring/flipping the bacon about once every 5 minutes.

2. Cook the scallops.

  • Add the scallops, coconut oil, and turmeric to a pan.
  • Cook on high until all the water boils off.
    • For frozen scallops, this takes about 15 minutes
    • For fresh, I would estimate 7-8 minutes.
  • Stir every 2 minutes to keep the scallops from sticking to the pan

3. Layer the plate.

  • Start with the salad first.
  • Add the avocado (and whatever other veggies you’re adding).
  • Try to keep the veggies concentrated toward the outside of the plate.
  • Carefully layer the bacon over the veggies, radiating from the center outward.
  • Pile a neat pile of the scallops on top of the bacon.

Serve, and enjoy!

As a whole meal, this has a delicious, rich, combination of complex but subtle flavors. Be careful not to let the bacon overpower the flavors that the avocado and scallops bring to the plate! This is also perfect to be served as an appetizer using smaller portions!
