The Chicken Soup craze continues! Craze, in fact, in general continues! Today makes my second day in a row without a suit. People are starting to notice, and it’s quite amusing. I’m having random co-workers come up to me with comments like “So, we finally broke you, huh?” and “Look at this! It’s a banner day for you!” I’m not sure, yet, whether I should be concerned for them that someone wearing a suit is such an uncomfortable proposition for my coworkers that they need to celebrate a day or two without one, or if I should take it as a compliment my fashion choices have been so noted. Or perhaps I should take it as an insult… Perhaps they’re saying that they didn’t like the look of a suit on me, and that somehow a shirt and slacks is an improvement. Maybe, just to figure it out, I should go back to wearing a suit, and see what they all have to say.

Today’s meal of Caramelized Orange Peel Chicken Stew was one of the “Inspired” meals that caught me by surprise (it was a good surprise) on Sunday afternoon. There I was, minding my own business, when all of a sudden I had a major craving for oranges. I’ve talked about cravings before, and generally my opinion is that, when you’re healthy, your cravings are meaningful and should be obeyed. My craving for oranges was sudden and surprising, and immediately spurred me in to thinking of ways to use oranges in my evening meal. I’ve done a few things with orange, most notably my Orange Beef meal (which was fantastic!). So I thought about doing an orange stir fry, the orange beef meal mentioned before, and possibly something else. My craving was  leaning heavily in the direction of the “possibly something else”. And that’s when it hit me!

Caramelized Orange Peel Chicken Stew; What you’ll need:

  • Caramelized Orange Peels:
  • Orange Peel, diced (from 4 large oranges, definitely organic only!)
  • 3 Oranges, sectioned and sliced
  • 2 tablespoons coconut oil
  • Chicken Stew
  • 1 lb Chicken Thigh Meat, cooked and shredded (cook it in the broth, then shredded)
  • 1/2 large Rutabaga, chopped


    Caramelized Orange Peels

  • 2 medium Carrots, chopped
  • 1 medium Zucchini, chopped
  • 1 cup Celery, sliced
  • 8-10 Favorite Mushrooms, sliced (I used Crimini)
  • Spices: Salt (to taste), 1/2 cup diced fresh Rosemary

Serves: 2+ (Can easily be stretched to 4 with more liquid and vegetables – I like it thick)
Prep and Cook time: 1.5 hours

Note: It’s probably best to use a cook pot that’s much larger than your meal to make sure there’s no over-boiling, or splashing.

1. In the stew pot, add the diced orange peels and the coconut oil.
Note: It is important to use organic for the oranges, since you’re eating the skin rather than throwing it away.

2. Cook orange peels on “Simmer” heat (about 2 out of 10) for the next 45 minutes, stirring every 10 minutes or so.

3. After 45 minutes of cook time, add the sliced orange sections to the pot and stir these in vigorously. Turn the heat up to 3 or 3.5 out of 10, and stir every 4-5 minutes.
CaramelizedOrangeChickenSoup-AllIngredientsNote: After 60 minutes of total cook time, the orange peel and orange should start to look and feel like a thick paste – and it should smell amazing!

4. Add the chicken thighs, rosemary, and several cups of water to the pot; enough water to completely cover the chicken thigh meat. Turn the heat up to high, and cook covered for 10 minutes.

5. After 10 minutes of cook time, add the vegetables to the stew and remove the chicken thigh meat; stir thoroughly.

6. Thoroughly shred the chicken thigh meat, and add it back into the stew; stir thoroughly.
Note: I shred the chicken meat directly in the stew, without removing it. If you’re confident that you won’t get burned, this is a great way to make sure that no flavor is lost!

7. Turn the heat down to medium low, or about 3.5 out or 10, and continue cooking until meal time; stirring regularly.
Now serve and enjoy!
